Meat and Cabbage Soup

 1 pound lean ground meat, beef or turkey
 1 onion finely chopped (about 1 ½ cups)
 3 cloves minced garlic
¼ cup parsley flakes
 1 teaspoon oregano flakes
1 ½  to 2 cups chopped green cabbage (about  ½ head)
            1 teaspoon salt
           ¼ teaspoon pepper
            2 cups or more water

Spray large pot with cooking oil or non-stick cooking spray.  Add ground meat onion, onion, parsley and oregano.  Sauté on high heat until meat and onion are lightly browned.  Drain off excess fat.  Add tomatoes, cabbage, salt, pepper and water.  Cover and bring to a boil, reduce to simmer.   Simmer covered about 1 hour.  Add more water as needed.
