Roasted Cauliflower

If your family balks at cauliflower, try oven roasting for a mild nutty flavor.


 

1 medium to large head cauliflower
to ½ cup vegetable, olive or nut oil
salt and pepper to taste


 


 

Preheat oven to 375°.  Place rack in center of oven.

Remove outer leaves from cauliflower and slice vertically into1 inch thick slices.  Brush both sides well with oil and sprinkle lightly with salt and pepper.  Place slices in single layer on baking sheet and roast for 30 to 35 minutes, tuning once, until golden brown.  Serve immediately.
