1 tablespoon fat (oil, butter, margarine)
1 cup long grain rice
1/4 cup spaghetti noodles, broken into
small pieces
2 3/4 cup stock
seasonings to taste
This is my version of the "San Francisco Treat", which is really just rice, with broken up noodles.
Here are the basic ingredients and proportions to make about 2 1/2 cups of cooked rice. Vary the
seasonings or stock, add other ingredients like vegetables and/ or cheese to accompany a variety
of meals. Add leftover meat (or tofu) and vegetables to make a one dish meal.
Heat oil in a skillet on medium low heat. Add rice and noodles; sauté until rice is white and
noodles are light brown. Add liquid and seasonings and bring to a boil. Reduce heat and simmer
for 20 minutes until rice is cooked (soft, not crunchy).
Variations:
Italian: add garlic, onions, basil, parsley, oregano, Parmesan
Spanish: add garlic, onions, bell peppers, diced tomatoes, paprika
Mexican: add garlic, onions, tomato sauce, chili powder
Asian: add garlic, onions, soy sauce, ginger
Broccoli and Cheese: broccoli and cheese (duh!)
