Crème Fraiche

Full rich flavor.  Okay, so you probably think this is too much trouble, but it is really worth the wait.  Use in place of sour cream.

 

7 parts whipping cream
1 part cultured buttermilk
 
 
 

Warm cream over medium low heat.  Add buttermilk.  Put in glass jar or bowl.  Store in warm place until thickens, about 8-24 hours.
