Melon Pineapple Salsa

An easy recipe to adapt to whatever fruit happens to be in season. This recipe is all about the fruit, so the fresher and riper the fruit, the better it will taste. It can be served as a salsa (with tortilla chips, on grilled chicken, on a hamburger, etc.) or as a salad.
 

1 cup watermelon, finely diced
1 cup cantaloupe, finely diced
1 cup honeydew, finely diced
1 cup fresh pineapple, finely diced

1 cup red onion, finely diced
1/4 cup chopped cilantro
1/4 cup rice wine vinegar

Combine all ingredients in a bowl and refrigerate at least one hour to allow flavors to blend.
