Roast Pork |

This includes two alternate sauces. |

| Put soy, vinegar, red pepper, pork
drippings in sauce pot with water. Bring to a boil and add
sugar. Let cool. Use liquid to marinate loin for 4-24 hours.
Put loin in roasting pan. Sprinkle with salt, black pepper, garlic powder and then cover with 1/8 inch brown sugar. Cook at 325° 'til medium rare. Put sauce back in sauce pot and bring to a boil. Add green onion and thicken with cornstarch. Serve with yams or try mashed yams (like mashed potatoes).

| Sauce 2: | |||||
| 1 pear 1 apple 1 yellow onion 5 cloves minced garlic |
1 teaspoon crushed red pepper 1 cup cider vinegar 2 tablespoons brown sugar oil for cooking |

| Cut pear, apple, onion in ¼ inch
dice. Put in sauce pot with garlic and red pepper. Add some
oil. Cook 'til onions are clear. Add vinegar &
sugar. Simmer 3-5 minutes.
Cook same as above. |
