Roast Pork

This  includes two alternate sauces.

 
Sauce 1:
 1 pork loin
¼ cup soy sauce
¼ cup rice vinegar
 1 teaspoon crushed red pepper
¼ cup pork base or drippings
 1 cup water
½ cup brown sugar
   
      brown sugar
      salt
      black pepper
      garlic powder
   1 bunch green onions, sliced
2-4 tablespoons cornstarch
Put soy, vinegar, red pepper, pork drippings in sauce pot with water.  Bring to a boil and add sugar.  Let cool.  Use liquid to marinate loin for 4-24 hours.

Put loin in roasting pan.  Sprinkle with salt, black pepper, garlic powder and then cover with 1/8 inch brown sugar.  Cook at 325° 'til medium rare.

Put sauce back in sauce pot and bring to a boil.  Add green onion and thicken with cornstarch.

Serve with yams or try mashed yams (like mashed potatoes).

 

Sauce 2:
1 pear
1 apple
1 yellow onion
5 cloves minced garlic
1 teaspoon crushed red pepper
1 cup cider vinegar
2 tablespoons brown sugar
   oil for cooking
 
Cut pear, apple, onion in ¼ inch dice.  Put in sauce pot with garlic and red pepper.  Add some oil.  Cook 'til onions are clear.  Add vinegar & sugar.  Simmer 3-5 minutes.

Cook same as above.
