Polish Sausage Casserole

Try this for a make ahead potluck or buffet supper dish.  It can be used as a main or side dish.

The caraway seeds help take some of the bitterness out of the sauerkraut.
 

6 small or 4 medium new red potatoes, washed and cut into quarters
1 pound polish sausage, cut into 1-inch slices
2 cups coarsely chopped green peppers
1 cup coarsely chopped yellow onion
1 (14-ounce) cans sauerkraut, including juice
1 tablespoon caraway seeds
 


 

Parboil potatoes in just enough water to cover until they begin to soften.  Drain and discard water.  Add to other ingredients in a slow cooker.  Cook until all ingredients are heated thoroughly, on high for about 2 hours or low for about 4 hours.
