Meat Loaf

Genuine comfort food.  This "Blue Plate Special" serves 4 with plenty left over for sandwiches and freezes well.

1 ½ pound ground beef or turkey
½ pound ground pork or sausage
     2 medium yellow onions, finely chopped
     4 eggs
     1 cup Italian bread crumbs
 2-3 cloves garlic, minced
 1 tablespoon dried oregano flakes
 2 tablespoon chopped fresh basil
 2 tablespoons chopped sage (optional)
¼ cup chopped fresh parsley
 1 teaspoon salt
 ½ teaspoon black pepper

Preheat oven to 350°.

Mix all ingredients thoroughly.  Make tightly formed oval mound in center of broiler pan.  Bake 50-60 minutes.  Serve with brown gravy, mashed potatoes, and green peas.

F For serving arrange canned crabapples on the platter and garnish with a few sprigs of fresh herbs.
