Lemon Chicken

 Just 3 ingredients.  Super simple and super tasty. 

 

      1 3 to 3 ½ pound cut up chicken or 4 chicken breasts with bone
  2 to 3 lemons
         1 tablespoon aromatic bitters, about   

 
Pre-heat oven to 375 °.

Slice lemons thinly and remove all seeds.  Place a layer of lemons on the bottom of a 2 quart baking dish (with a lid for later).  Place the chicken over the lemons.  Sprinkle the chicken with bitters on one side and then turn over.  Sprinkle the other side of the chicken with bitters and lay the remainder of the lemons over top.  Cover with lid or foil and bake for 45 minutes to 1 hour.  Serve with Lemon-Thyme Rice or polenta.
