Fried Fish Fillets

 

4 4-ounce fish fillets, such as catfish or red snapper
   ¾ cup cornmeal
    2 tablespoons flour
    1 teaspoon salt
    1 teaspoon paprika
   ½ teaspoon cayenne pepper
   ¼ teaspoon black pepper
½ olive oil and ½ vegetable oil for frying
 
Mix cornmeal, flour, salt, paprika and peppers in plate or shallow dish.   Dredge fish on both sides in cornmeal and flour mixture.

Heat skillet on medium heat.  Add oils to about ½ inch. Place fish fillets and cook about 3 minutes each side until thoroughly cooked. 

Serve with cornbread.
