Cinnamon Toast

What children do not like cinnamon toast?  Make this more fun by letting them mix the cinnamon and sugar together and help make butter.  No, I realize you are not going to make butter every day, but try it at least once.

Cinnamon and Sugar

½ cup granulated sugar
 1 teaspoon ground cinnamon

Mix together in a small bowl and pour into a container with a shaker top.

Butter

1 pint whipping cream
   scant ¼ teaspoon salt, optional

Small children need supervision.  At the beginning and end of the process there will be some splattering of the liquid.  Whip cream at high speed with electric mixer in medium size bowl until the liquid (whey) separates from the milk solids (curds).  This process will take about 30 minutes, so be prepared with plenty of time and take turns.   Scoop the butter and liquid into a fine sieve and allow to drain for several minutes until most of the liquid drains off.   Put in a refrigerator container, patting down with back of tablespoon.  Pour off any remaining liquid.  Depending upon how long you drain in the sieve and how hard you pat down in the container, you may have some additional "bleeding" of liquid.  Not to worry, just pour it off as you use it.  Store in refrigerator.  Makes about 1 cup butter.

Toast bread and spread with butter.  Sprinkle cinnamon and sugar mixture over top.
