Vinegar Cobbler

Although I do not remember this dessert ever being served in my home, I understand that it was a favorite of my mother and her siblings growing up in the Depression.   Thanks to my Uncle Reuben Cowan for preserving the recipe and passing it along. 
 

Crust (Batter):

     ½ cup butter or margarine
      1 cup sugar
      1 cup flour
  1
¼ teaspoon baking powder
         pinch of salt
    
¾ cup milk

Filling:

 2 cups sugar
 1 cup apple cider vinegar
¼ cup butter
 3 cups water


Preheat oven to 350°.


Crust (Batter):

Melt butter in baking pan (9x13x2) while oven is preheating.

Mix sugar, flour, baking powder, salt and milk until smooth.  Do not over beat or over stir.  Pour over the melted butter, but do NOT mix the batter into the butter.  (Got that?)

Filling:

Mix sugar, vinegar, butter and water.  Bring to a boil.  Pour over crust.

Baking instructions:

Bake for 30 minutes.
