Almond Milk Curd

Don't be put off by the name.  This Asian dessert is very refreshing and unusual.

 

 1 cup cold water
 1 envelope unflavored gelatin
½ cup sugar
1 tablespoon almond extract
1 cup milk
   canned fruit

Pour water into sauce pan and slowly sprinkle gelatin over surface. Heat 3 minutes over medium heat, stirring constantly.  Add sugar, extract and milk.  Mix thoroughly and cook one minute.  Pour into square glass dish and chill until firm.  Cut into cubes and serve with garnish of mandarin oranges, fruit cocktail or other colorful fruit.
