Beet Ricotta Pancakes


 

This recipe was inspired by Jessica Seinfeld's "Deceptively Delicious". I added some whole wheat flour for extra nutrition and a nice nutty taste. These are great fresh, but not so good when they are reheated, in my opinion. When first made, I could barely notice the beet flavor, but it was very distinctive when reheated. However, my toddler does not seem to mind and will devour them whenever I serve them.
 

1 cup Reduced Fat Baking Mix
1/2 cup whole wheat flour
1/2 cup pureed cooked beets
1/2 cup ricotta cheese
 

 1 egg
1 cup milk
1 tsp vanilla

Mix all ingredients in a blender until smooth. Cook on a medium-hot griddle until brown on both sides.
