Ginger Ale Syrup

2 cups fresh ginger in ½ inch slices, about 2 large hands
2 cups sugar

2 cups water

2 tablespoons syrup for each serving.

Bring water, sugar and ginger slices to a boil.  Reduce heat and simmer about 40-45 minutes until liquid is reduced in half.  Strain to remove ginger. Will thicken as it cools.  Store in refrigerator until ready to use.

To make drink fill large 10-12 ounce glass with ice and add 2 tablespoons syrup.  Fill glass with club soda and stir.

Audrey's note - the removed ginger slices can be enjoyed as candided ginger (a spicy sweet treat). Just spread the ginger slices on wax paper to cool and roll in additional sugar as desired. Store in an airtight container.
The syrup can also be used over vanilla ice cream or to sweeten tea.
