Hot Tortilla Appetizers

These could easily be made into a quick snack for one in a toaster oven. 

One well known Tucson family-owned Mexican restaurant is well known for its "Cheese Crisps", a very large flour tortilla, topped with cheese and served whole as an appetizer.  Adds on are offered for Chile Verde, Grilled Chicken or carne seca.  The latter is beef dried in a custom-built dryer constructed above the restaurant.  The beef is dried by Tucson's natural "Dry Heat".

 

6 flour tortillas
2 cups shredded mild Cheddar cheese
2 tablespoons seeded and chopped canned green chiles

 

Preheat oven to 425°.  Place baking rack in center of oven.

Divide cheese and sprinkle evenly over tortillas.  Leave about a ½ inch margin around the edges.  Tip with chiles.  Bake on ungreased baking sheet until cheese melts and tortillas a lightly browned, about 8 to 10 minutes.  Cut each tortilla into 6 wedges.  Serve hot.

Variation:  Substitute Pepper Jack cheese for the Cheddar and green chiles.  Chopped or sliced ripe olive add an interesting flavor and a touch of color.
