Hearty Hot Dip


 

½ pound ground beef or sausage
½ cup minced onion
1 (15
½ ounce) can red kidney beans, undrained
½ cup catsup
½ tablespoon chili powder
    salt to taste
¼ teaspoon ground cumin
   dash cayenne pepper
½ pound cheddar cheese, diced

Sauté beef or sausage in skillet until done and drain off fat.  Add onion and cook until onion is translucent but not browned.  Add beans with the liquid.  Mash with a fork until blended with meat and onion.  Add catsup and spices.  Simmer about 5 minutes, stirring occasionally.  Add cheese and continue stirring until cheese is melted.  Serve in chafing dish or crock pot with crackers or French bread cubes as dippers.
