Boiled Peanuts

A very unusual dish from Charleston, South Carolina to which we have added a twist--garlic.

      2 cups peanuts, raw in the shell
      4 cups water
    10 large peeled garlic cloves
  1 ½ teaspoons salt

Put the peanuts, in their shells, into a saucepan, add the water, garlic and salt.   Bring to a boil.  Reduce the heat to a good simmer and cook approximately 25 minutes and test for doneness.  Cook longer if necessary until peanut meat is soft.   Serve either warm or cold with an empty dish on the side for discarding the shells.
